How to Make the Perfect Boozy Iced Tea

We all know about the legendary Long Island Iced Tea, but what about a delish alternative from a little closer to home? Here’s how to make a proper boozy iced tea from Down Under, using craft gin from our very own gin distillery in Richmond. Ingredients

  • 150ml craft gin (we recommend our Everyday Salvation Gin)
  • 450ml of brewed and cooled Lady Grey Tea (or Earl Grey if you want a stronger bergamot flavour)
  • 100ml of simple syrup
  • 75ml of elderflower cordial
  • Grapefruit, orange or lemon slices with a few leaves of mint to garnish

Start by making the tea. To get enough tea at the right strength, let 5 bags steep in one litre of boiled water for 5 minutes. Let this cool.

Take 500ml of the tea (the rest you can keep for the seconds’ everyone will be asking for!), mix in all the ingredients (including the craft gin) other than the garnishes and pour into a tall jug (a litre jug will be just fine).

Add plenty of ice (about ¼ of the jug), muddle in the mint and citrus slices, give it a stir and pour into highball tumblers before the ice starts melting too much. You can always add a bit more craft gin for a bit more kick. Enjoy!
